Description

A delicious and customizable taco-inspired lunch packed into a bento box! Perfect for meal prep, picnics, or school lunches.


Ingredients

  • 1 1/2 cups chopped cooked chicken

  • 1/2 cup cooked corn

  • 1/2 cup sour cream

  • 1/4 cup chopped red bell pepper

  • 1 (15-ounce) can black beans, rinsed and drained

  • 3 tablespoons chopped fresh cilantro

  • 3 tablespoons taco seasoning

  • Shredded lettuce

  • 8 taco shells

  • 12 (3/4-ounce) slices Land O Lakes® White Deli American cheese, cut in half diagonally

  • Shredded carrot

  • Pico de gallo


Instructions

  • In a bowl, combine chicken, corn, sour cream, bell pepper, black beans, cilantro, and taco seasoning. Mix well.

  • Divide chicken salad evenly into small containers. Store in the refrigerator.

  • In separate containers, place shredded lettuce, taco shells, and cheese slices. Add shredded carrots and pico de gallo into small containers.

  • Assemble tacos when ready to eat by filling taco shells with chicken salad and topping with lettuce, cheese, carrots, and pico de gallo.

Notes

  • Use rotisserie chicken for quicker prep.

  • Store taco shells separately to avoid sogginess.

  • Keep the bento box chilled with an ice pack if needed.
