Description

Spooky Halloween Skull Potatoes are mini potatoes carved into fun skull shapes, seasoned with spices, and roasted until golden and crispy. A festive Halloween appetizer or side dish that’s both whimsical and delicious.


Ingredients

  • 1 ½ lbs red mini creamer potatoes

  • 3 tbsp lemon juice

  • 2 tbsp olive oil

  • 1 tsp salt

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp black pepper

  • Parsley flakes, for garnish


Instructions

  • Preheat oven to 385°F and line a baking sheet with parchment paper.

  • Wash potatoes, then carve small skull faces using a paring knife. Place carved potatoes in lemon water to prevent browning.

  • Mix olive oil, remaining lemon juice, and seasonings in a bowl. Drain potatoes and toss to coat.

  • Arrange potatoes face-up on the baking sheet and roast for 30 minutes, until golden brown and tender.

  • Garnish with parsley flakes before serving.
