8 fresh peaches, peeled, pitted, and sliced

¼ teaspoon ground cinnamon

⅛ teaspoon ground nutmeg

1 teaspoon fresh lemon juice

2 teaspoons cornstarch

1 cup all-purpose flour

6 tablespoons unsalted butter, chilled and cut into small pieces

¼ cup boiling water

3 tablespoons white sugar

Instructions

Preheat the oven to 425°F (220°C).

Toss peaches with white sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch, then place in a 2-quart baking dish. Bake for 10 minutes.

In a bowl, mix flour, sugars, baking powder, and salt. Cut in the chilled butter until the mixture forms coarse crumbs. Stir in boiling water.

After 10 minutes, remove the peaches and drop spoonfuls of topping over the fruit.

Sprinkle with cinnamon-sugar mixture and bake for 30 minutes until the topping is golden brown.
