Description

These crispy, cheesy Smashed Green Onion Potato Bombs are the perfect appetizer or side dish, topped with garlic butter and fresh green onions.


Ingredients

  • ½ lb baby yellow potatoes

  • 1 tbsp olive oil

  • Sea salt and freshly cracked black pepper, to taste

  • Garlic powder, to taste

  • 1-2 tbsp butter, melted

  • 1 clove garlic, finely minced

  • ½ cup cheddar cheese, finely shredded

  • 1 green onion, finely chopped

  • Fresh parsley, finely chopped

  • Sour cream for dipping

  • Poblano cream sauce for dipping (optional)


Instructions

  • Preheat the oven to 400°F (200°C) and roast the baby potatoes with olive oil, salt, pepper, and garlic powder for 20-25 minutes.

  • Smash each potato and brush with melted garlic butter.

  • Top with cheddar cheese and bake for another 10-15 minutes until melted and bubbly.

  • Garnish with chopped green onions and parsley. Serve with sour cream or poblano cream sauce.
