Description

Fresh, vibrant, and protein-packed, these Shrimp Avocado Mango Bowls feature grilled shrimp, creamy avocado, and sweet mango over a base of rice or quinoa—perfect for a quick, healthy meal.


Ingredients

  • 1 lb large shrimp, peeled and deveined

  • 2 ripe avocados, diced

  • 2 ripe mangoes, diced

  • ¼ red onion, finely diced

  • ¼ cup chopped fresh cilantro

  • Juice of 23 limes

  • ½1 jalapeño, minced (optional)

  • 23 cups cooked rice or quinoa

  • 2 tbsp olive oil

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp garlic powder

  • Salt and black pepper, to taste

  • Optional dressing: 2 tbsp olive oil, 1 tbsp lime juice, ½ tsp honey or maple syrup, salt and pepper

  • Optional toppings: sesame seeds, red pepper flakes, chopped green onions, tortilla strips


Instructions

  1. Mix diced mango, onion, jalapeño, cilantro, lime juice, salt, and pepper to create salsa. Set aside.

  2. Marinate shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Let sit 10–15 minutes.

  3. Sear shrimp in a skillet for 2–3 minutes per side until pink and opaque.

  4. Dice avocados and prepare or warm rice/quinoa.

  5. Optional: Whisk dressing ingredients and adjust to taste.

  6. Assemble bowls with rice, salsa, avocado, shrimp, and desired toppings. Drizzle with dressing and serve.
