Description

These Mississippi Mud Potatoes are creamy, cheesy, and loaded with crispy bacon and garlic. A perfect side dish for any occasion!


Ingredients

  • 8 slices bacon (about 9 ounces), cut into ¼-inch-wide pieces

  • 2 ½ pounds Yukon gold potatoes (about 5 medium), peeled and diced

  • ¾ cup mayonnaise

  • 6 ounces mild yellow cheddar cheese, shredded (about 1 ½ cups), divided

  • 4 cloves garlic, minced

  • 1 tablespoon Dijon mustard

  • ½ teaspoon kosher salt

  • ½ teaspoon freshly ground black pepper

  • 1 tablespoon finely chopped fresh chives (about ½ bunch)


Instructions

  • Preheat the oven to 400°F. Cook the chopped bacon in a skillet until crispy, about 8-10 minutes. Remove and set aside.

  • In a large bowl, mix the potatoes, mayonnaise, 3 ounces of shredded cheese, garlic, Dijon mustard, salt, and pepper. Stir in ½ cup of the bacon.

  • Transfer the mixture to a 10-inch cast iron skillet and bake for 1 hour or until the potatoes are tender.

  • Switch the oven to broil. Sprinkle the remaining cheese on top and broil for 2-3 minutes until golden and bubbly.

  • Let cool for 10 minutes. Garnish with the remaining bacon and chopped chives before serving.
