Ingredients
For the Waffles:

For the Filling:

6 large eggs

2 tablespoons milk

2 tablespoons butter (plus more for toasting)

4 slices cheese (American, cheddar, or pepper Jack)
Instructions

Preheat oven to 400°F and bake sausage patties for 15–20 minutes.

Whisk together flour, baking powder, and salt. Stir in milk, melted butter, and egg. Cook mini waffles in a waffle maker (2–3 minutes each).

Whisk eggs with milk, salt, and pepper. Cook gently in butter until softly scrambled.

Assemble sandwiches with waffles, sausage, scrambled eggs, and cheese.

Butter outsides and toast sandwiches in a skillet for 2 minutes per side until golden.

Serve warm, with syrup if desired.
