Description
A stunning, color-changing lemonade that uses butterfly pea flowers and lemon syrup to create a magical galaxy effect.
Ingredients

25-30 dried blue pea flowers

3 cups boiling water

1¼ cups fresh lemon juice

1½ cups white sugar

½ cup additional lemon juice

4 cups crushed regular ice

4 cups crushed butterfly pea magic ice

2 cups lemon syrup

4 cups club soda

8 fl oz vodka, tequila, or gin (optional)
Instructions

Steep 25-30 dried blue pea flowers in 3 cups of boiling water for 20-30 minutes until the water turns deep blue.

Strain the tea and pour it into ice cube trays. Freeze overnight.

Crush the magic ice cubes using a blender or mallet, keeping some larger pieces for the galaxy effect.

In a saucepan, heat 1¼ cups lemon juice and 1½ cups sugar over medium heat. Simmer for 10 minutes until thickened.

Add the remaining ½ cup lemon juice to the syrup, then cool completely. Store in the fridge.

To assemble, fill a glass with regular crushed ice and crushed magic ice, pour in lemon syrup, and top with club soda (or lemon-lime soda). Optional: Add vodka, tequila, or gin for an adult version.

Garnish with extra crushed magic ice and serve.
