Description

A creamy and healthy twist on the classic broccoli cheddar soup, packed with protein from cottage cheese for a satisfying and nutritious meal.


Ingredients

  • 1 tablespoon butter

  • 1 large yellow onion, diced

  • 2 large carrots, peeled and diced

  • 1 stalk celery, diced

  • 2 cloves garlic, minced

  • 1/4 cup all-purpose flour (or gluten-free flour)

  • 1/2 teaspoon smoked paprika

  • 3 cups vegetable broth (preferably not-chicken style)

  • 4 cups chopped broccoli

  • 2 cups 1% milk

  • 4 oz cheddar cheese, shredded (about 1 cup)

  • 1 cup low-fat cottage cheese, blended

  • Salt & pepper, to taste


Instructions

  • In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery, cooking for 10 minutes while stirring frequently.

  • Add garlic and cook for 1 more minute. Stir in smoked paprika and flour, cooking for 1 minute to coat the vegetables.

  • Pour in the vegetable broth and add the chopped broccoli. Bring to a simmer and cook for 8–9 minutes until the broccoli is tender.

  • Lower the heat and add the milk, warming the soup through. Stir in blended cottage cheese and shredded cheddar cheese until melted.

  • Carefully blend one cup of the soup, then return it to the pot. Stir well.

  • Taste and season with salt and pepper as needed, then serve warm.

Notes

  • Adjust the thickness by adding more broth for a thinner soup or simmering longer for a thicker consistency.

  • Use an immersion blender for a smoother texture.
