Description
A creamy and healthy twist on the classic broccoli cheddar soup, packed with protein from cottage cheese for a satisfying and nutritious meal.
Ingredients

1 tablespoon butter

1 large yellow onion, diced

2 large carrots, peeled and diced

1 stalk celery, diced

2 cloves garlic, minced

1/4 cup all-purpose flour (or gluten-free flour)

1/2 teaspoon smoked paprika

3 cups vegetable broth (preferably not-chicken style)

4 cups chopped broccoli

2 cups 1% milk
-
4 oz cheddar cheese, shredded (about 1 cup)

1 cup low-fat cottage cheese, blended

Salt & pepper, to taste
Instructions

In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery, cooking for 10 minutes while stirring frequently.

Add garlic and cook for 1 more minute. Stir in smoked paprika and flour, cooking for 1 minute to coat the vegetables.

Pour in the vegetable broth and add the chopped broccoli. Bring to a simmer and cook for 8–9 minutes until the broccoli is tender.

Lower the heat and add the milk, warming the soup through. Stir in blended cottage cheese and shredded cheddar cheese until melted.

Carefully blend one cup of the soup, then return it to the pot. Stir well.

Taste and season with salt and pepper as needed, then serve warm.
Notes

Adjust the thickness by adding more broth for a thinner soup or simmering longer for a thicker consistency.
