Description
A rich and creamy salad with French green lentils, fresh herbs, and indulgent burrata. Perfect as a side dish or light main course.
Ingredients

1 cup French green lentils, rinsed and picked over

¼ cup olive oil

¼ cup raw walnut halves, chopped

1 clove garlic, smashed

2 sprigs thyme

1 medium shallot, finely chopped

2 ½ Tbsp balsamic vinegar

Kosher salt and pepper

2 cups baby arugula
-
1 cup basil leaves, roughly chopped

8 oz burrata, torn
Instructions

Cook lentils according to package instructions, then drain and set aside.

Heat olive oil in a skillet, adding walnuts, garlic, and thyme. Cook until fragrant and golden, about 4-6 minutes.

Add shallot to the skillet and cook for 1 minute. Remove from heat, discard garlic and thyme, then whisk in balsamic vinegar, salt, and pepper.

Fold in lentils, arugula, and basil. Transfer to a platter and top with burrata.

Serve immediately, or chill for a more flavorful salad.
