Description

Garlic Butter Beef is a slow-cooked, melt-in-your-mouth chuck roast bathed in savory garlic butter and herbs—easy prep, huge flavor, perfect for family dinners.


Ingredients

  • 2 pounds beef chuck roast

  • 8 cloves fresh garlic, minced

  • 1/2 cup unsalted butter (1 stick)

  • 1 cup beef broth

  • 1 large onion, thinly sliced

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon dried thyme


Instructions

  • Pat the beef dry and season all sides with salt and pepper.

  • Melt 1/4 cup butter in a skillet over medium-high heat; sear beef 2–3 minutes per side until deeply browned.

  • Add onion and garlic to the slow cooker; nestle the seared beef on top.

  • Pour in beef broth around the meat; dot the remaining butter over the roast and sprinkle with thyme.

  • Cover and cook on LOW 8 hours (or HIGH 4 hours) until fork-tender.

  • Shred the Garlic Butter Beef in the cooker, toss with the buttery juices, and serve.
