2 pounds beef chuck roast

8 cloves fresh garlic, minced

1 teaspoon dried thyme
Instructions

Pat the beef dry and season all sides with salt and pepper.

Melt 1/4 cup butter in a skillet over medium-high heat; sear beef 2–3 minutes per side until deeply browned.

Add onion and garlic to the slow cooker; nestle the seared beef on top.

Pour in beef broth around the meat; dot the remaining butter over the roast and sprinkle with thyme.
