This creamy corn and cucumber salad is the perfect refreshing dish, combining crisp cucumbers, sweet corn, rotisserie chicken, and a flavorful creamy dressing. Ideal for lunch, BBQs, or meal prep!

Ingredients

  • 1 1/2 English cucumbers, halved and sliced (about 3 cups)

  • 2 cups rotisserie chicken, chopped

  • 1/4 cup cilantro, minced

  • 3 green onions, sliced

  • 1 jalapeño, seeded and diced

  • 1/4 red onion, diced

  • 1/2 red bell pepper, seeded and diced

  • 15.25 oz can sweet corn, drained

  • 1/2 cup plain Greek yogurt (2% or higher for creaminess)

  • 1/3 cup mayonnaise

  • 1 lime, juice and zest of

  • 1 clove garlic, finely minced or grated

  • 1 tsp chili powder

  • 1/2 tsp paprika

  • 1/2 tsp cumin

  • 1/4 tsp salt

  • 1/4 tsp freshly cracked pepper

Instructions

    • Prepare the Cucumbers: Lay the cucumber slices in a single layer on paper towels. Place another layer of paper towels on top, pressing gently to absorb excess moisture. Let them sit while you prep the other ingredients.

    • Make the Dressing: In a medium bowl, whisk together Greek yogurt, mayonnaise, garlic, lime juice and zest, chili powder, paprika, cumin, salt, and pepper until smooth. Taste and adjust the seasoning if needed.

    • Mix the Salad: In a large bowl, combine the cucumbers, corn, rotisserie chicken, cilantro, green onions, jalapeño, red onion, and red bell pepper. Toss everything together to combine.

    • Add Dressing: Pour most of the dressing over the salad and gently fold to coat all the ingredients. Add the remaining dressing if you prefer more creaminess.

    • Chill and Serve: Refrigerate for at least 30 minutes to allow the flavors to meld. Toss the salad before serving and enjoy chilled.

Notes

    • Dry the Cucumbers: Make sure to dry the cucumber slices well using paper towels to prevent the salad from becoming watery.

    • Adjust the Dressing: Feel free to tweak the dressing with more lime, chili powder, or cumin based on your personal flavor preferences.

    • Storage: This salad keeps well in the fridge for up to 3 days, making it a great make-ahead option for meal prep or potlucks.
