These Cranberry Pistachio Energy Bites are a perfect on-the-go snack, packed with wholesome ingredients like cranberries, pistachios, and oats. Easy to make, gluten-free, and full of natural energy!


Ingredients

  • 1 cup rolled oats

  • 1/2 cup pistachios, chopped

  • 1/2 cup dried cranberries, chopped

  • 1/4 cup honey (or maple syrup for a vegan option)

  • 1/4 cup peanut butter (or almond butter)

  • 1 tablespoon chia seeds (optional)

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon cinnamon

  • Pinch of salt


Instructions

  • In a large bowl, mix oats, pistachios, cranberries, chia seeds (if using), cinnamon, and salt.

  • In another bowl, stir honey (or maple syrup), peanut butter, and vanilla extract until smooth.

  • Pour wet mixture over dry ingredients and mix until combined.

  • Roll into 1-inch balls using your hands or a cookie scoop.

  • Place on a parchment-lined tray and refrigerate for 30 minutes.

  • Store in an airtight container in the fridge for up to 1 week or freeze for up to 2 months.
