This Corn Salad recipe features sweet corn, zesty lime, and a creamy dressing, making it the perfect side dish for any meal or occasion.
Ingredients

4 ears fresh corn, husked

Extra-virgin olive oil, for brushing

1½ tablespoons mayo (or vegan mayo)

1 garlic clove, minced

Zest and juice of 1 lime

⅓ cup chopped scallions

¼ cup crumbled Cotija or feta cheese

¼ cup finely chopped fresh cilantro

¼ teaspoon smoked paprika or chili powder

1 jalapeño pepper, diced

¼ teaspoon sea salt
Instructions

Preheat your grill to medium-high heat. Brush the corn with olive oil and grill for 2 minutes per side or until char marks form.

Remove from the grill, cool slightly, and slice the kernels off the cob.

In a bowl, combine mayo, garlic, lime zest, and juice. Add the corn kernels and mix well.

Stir in chopped scallions, Cotija or feta cheese, cilantro, smoked paprika or chili powder, jalapeño, and sea salt.

Season to taste, then serve immediately or chill until ready to serve.
