Description

This Corn Salad recipe features sweet corn, zesty lime, and a creamy dressing, making it the perfect side dish for any meal or occasion.


Ingredients

  • 4 ears fresh corn, husked

  • Extra-virgin olive oil, for brushing

  • 1½ tablespoons mayo (or vegan mayo)

  • 1 garlic clove, minced

  • Zest and juice of 1 lime

  • ⅓ cup chopped scallions

  • ¼ cup crumbled Cotija or feta cheese

  • ¼ cup finely chopped fresh cilantro

  • ¼ teaspoon smoked paprika or chili powder

  • 1 jalapeño pepper, diced

  • ¼ teaspoon sea salt


Instructions

  • Preheat your grill to medium-high heat. Brush the corn with olive oil and grill for 2 minutes per side or until char marks form.

  • Remove from the grill, cool slightly, and slice the kernels off the cob.

  • In a bowl, combine mayo, garlic, lime zest, and juice. Add the corn kernels and mix well.

  • Stir in chopped scallions, Cotija or feta cheese, cilantro, smoked paprika or chili powder, jalapeño, and sea salt.

  • Season to taste, then serve immediately or chill until ready to serve.

Notes

  • You can roast the jalapeño alongside the corn for a deeper flavor.

  • For a vegan version, omit the cheese.
