Ingredients

1 cup spiced apple cider (½ cup simmered and reduced)

1 stick unsalted butter (room temperature)

¾ cup light brown sugar

2 eggs

2 tsp vanilla extract

⅓ cup sweetened applesauce

½ cup vanilla Greek yogurt

1 tsp nutmeg

2 tsp ground cinnamon
-
2 tsp baking powder

2 cups all-purpose flour

1 ½ tbsp cornstarch

¼ tsp salt

Topping:

3 tbsp white sugar
-
1 ½ tsp ground cinnamon

Instructions

Heat spiced apple cider in a saucepan until it reduces to ½ cup, then remove from heat.

Preheat oven to 350°F (175°C). In a stand mixer, beat together butter and brown sugar until smooth.

Add eggs and vanilla extract, beating again until incorporated.

Mix in applesauce and yogurt until smooth.

In a separate bowl, whisk together nutmeg, cinnamon, baking powder, flour, cornstarch, and salt.

Gradually combine the dry ingredients with the wet ingredients until smooth.

Stir in the cooled apple cider and mix thoroughly.

Pour batter into a lined 9×5 loaf pan and bake for 38-45 minutes, or until a toothpick comes out clean.

For topping, combine sugar and cinnamon, and sprinkle over the bread as soon as it’s out of the oven.

Let cool slightly, then slice and enjoy!
