Description

A soft, moist loaf with the perfect balance of cinnamon and sugar. Ideal for breakfast, brunch, or a sweet snack!


Ingredients

  • 1 cup spiced apple cider (½ cup simmered and reduced)

  • 1 stick unsalted butter (room temperature)

  • ¾ cup light brown sugar

  • 2 eggs

  • 2 tsp vanilla extract

  • ⅓ cup sweetened applesauce

  • ½ cup vanilla Greek yogurt

  • 1 tsp nutmeg

  • 2 tsp ground cinnamon

  • 2 tsp baking powder

  • 2 cups all-purpose flour

  • 1 ½ tbsp cornstarch

  • ¼ tsp salt

  • Topping:

    • 3 tbsp white sugar

    • 1 ½ tsp ground cinnamon


Instructions

  • Heat spiced apple cider in a saucepan until it reduces to ½ cup, then remove from heat.

  • Preheat oven to 350°F (175°C). In a stand mixer, beat together butter and brown sugar until smooth.

  • Add eggs and vanilla extract, beating again until incorporated.

  • Mix in applesauce and yogurt until smooth.

  • In a separate bowl, whisk together nutmeg, cinnamon, baking powder, flour, cornstarch, and salt.

  • Gradually combine the dry ingredients with the wet ingredients until smooth.

  • Stir in the cooled apple cider and mix thoroughly.

  • Pour batter into a lined 9×5 loaf pan and bake for 38-45 minutes, or until a toothpick comes out clean.

  • For topping, combine sugar and cinnamon, and sprinkle over the bread as soon as it’s out of the oven.

  • Let cool slightly, then slice and enjoy!

Notes

  • Ensure butter is at room temperature for easy mixing.

  • Don’t overmix the batter to avoid a dense loaf.

  • Add a handful of nuts or chocolate chips to enhance the flavor, but don’t overload the batter.
