Description

A creamy, refreshing chilled soup that blends ripe avocados with zesty lime, fresh cilantro, and garlic. Perfect for summer gatherings or light meals, ready in just 15 minutes.


Ingredients

    • 2 ripe avocados

    • 1 cup low-sodium vegetable broth

    • 1/4 cup fresh lime juice (about 2 limes)

    • Zest of 1 lime

    • 1/4 cup fresh cilantro leaves

    • 1 clove garlic, minced

    • Salt to taste

    • Optional: 1/4 cup sour cream or Greek yogurt


Instructions

    • Halve the avocados, remove pits, and scoop the flesh into a blender.

    • Zest and juice the limes.

    • Add avocado, vegetable broth, lime juice, lime zest, cilantro, garlic, and salt to the blender. Blend until smooth and creamy.

    • Adjust consistency with more vegetable broth if desired.
