Description

Chicken Pot Pie Croquettes are crispy, bite-sized snacks filled with a creamy chicken and vegetable mixture, perfect for any occasion.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts

  • 2 cloves fresh garlic, minced

  • 1 cup frozen mixed vegetables (carrots, peas, corn)

  • ½ cup heavy cream

  • ½ cup low-sodium chicken broth

  • 1 cup panko breadcrumbs

  • 2 tbsp low-sodium soy sauce

  • 1 tbsp Worcestershire sauce

  • Salt and pepper, to taste

  • Olive oil for cooking


Instructions

  • Preheat your oven to 400°F (200°C) and coat a baking dish with nonstick cooking spray.

  • Season chicken breasts with salt and pepper; cook in a skillet with olive oil over medium heat until golden brown (about 6 minutes per side). Cool and shred.

  • In the same skillet, sauté garlic and mixed vegetables for about 5 minutes. Stir in shredded chicken, heavy cream, and chicken broth until well combined.

  • Shape filling into balls or patties; roll in panko breadcrumbs until fully coated.

  • Arrange croquettes on a parchment-lined baking sheet; bake for 20 minutes or until golden brown.

  • Serve drizzled with a mixture of soy sauce and Worcestershire sauce.

Notes
