Chicken Pot Pie Croquettes are crispy, bite-sized snacks filled with a creamy chicken and vegetable mixture, perfect for any occasion.
Ingredients

1.5 lbs boneless, skinless chicken breasts

2 cloves fresh garlic, minced

1 cup frozen mixed vegetables (carrots, peas, corn)

½ cup heavy cream

½ cup low-sodium chicken broth

1 cup panko breadcrumbs

2 tbsp low-sodium soy sauce

1 tbsp Worcestershire sauce

Salt and pepper, to taste

Olive oil for cooking
Instructions

Preheat your oven to 400°F (200°C) and coat a baking dish with nonstick cooking spray.

Season chicken breasts with salt and pepper; cook in a skillet with olive oil over medium heat until golden brown (about 6 minutes per side). Cool and shred.

In the same skillet, sauté garlic and mixed vegetables for about 5 minutes. Stir in shredded chicken, heavy cream, and chicken broth until well combined.

Shape filling into balls or patties; roll in panko breadcrumbs until fully coated.

Arrange croquettes on a parchment-lined baking sheet; bake for 20 minutes or until golden brown.

Serve drizzled with a mixture of soy sauce and Worcestershire sauce.
