A comforting, family-friendly casserole packed with all the flavors of classic chicken Parmesan—perfect for a busy weeknight dinner.
Ingredients

12 ounces penne pasta (about 4 cups dry pasta)

2 cups cooked shredded or cubed chicken

1 (24-ounce) jar marinara sauce

1 (14.5-ounce) can diced tomatoes (undrained)

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 teaspoons Italian seasoning

½ teaspoon black pepper
-
¼ cup panko breadcrumbs

2 tablespoons chopped fresh parsley and/or basil (optional garnish)
Instructions

Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.

Cook the penne pasta according to package instructions and drain.

Mix the cooked pasta, shredded chicken, marinara sauce, diced tomatoes, mozzarella cheese, Parmesan cheese, Italian seasoning, and black pepper in a large bowl.

Spoon the mixture into the prepared baking dish and top with the remaining marinara sauce.

Cover with foil and bake for 30 minutes.

Remove the foil, top with remaining mozzarella, Parmesan, and panko breadcrumbs. Bake for an additional 10 minutes, uncovered, until the cheese is melted.

Garnish with fresh parsley or basil, and serve hot.

For extra crunch, broil the casserole for 2-3 minutes at the end.
