Description

A comforting, family-friendly casserole packed with all the flavors of classic chicken Parmesan—perfect for a busy weeknight dinner.


Ingredients

  • 12 ounces penne pasta (about 4 cups dry pasta)

  • 2 cups cooked shredded or cubed chicken

  • 1 (24-ounce) jar marinara sauce

  • 1 (14.5-ounce) can diced tomatoes (undrained)

  • 2 cups shredded mozzarella cheese

  • 1 cup grated Parmesan cheese

  • 2 teaspoons Italian seasoning

  • ½ teaspoon black pepper

  • ¼ cup panko breadcrumbs

  • 2 tablespoons chopped fresh parsley and/or basil (optional garnish)


Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.

  • Cook the penne pasta according to package instructions and drain.

  • Mix the cooked pasta, shredded chicken, marinara sauce, diced tomatoes, mozzarella cheese, Parmesan cheese, Italian seasoning, and black pepper in a large bowl.

  • Spoon the mixture into the prepared baking dish and top with the remaining marinara sauce.

  • Cover with foil and bake for 30 minutes.

  • Remove the foil, top with remaining mozzarella, Parmesan, and panko breadcrumbs. Bake for an additional 10 minutes, uncovered, until the cheese is melted.

  • Garnish with fresh parsley or basil, and serve hot.

Notes

  • For extra crunch, broil the casserole for 2-3 minutes at the end.

  • Use rotisserie chicken for a quicker prep.
