This creamy Chicken Gnocchi Soup is the perfect fall comfort food, combining tender chicken, soft gnocchi, and fresh vegetables in a rich broth. Quick to prepare and absolutely delicious!
Ingredients

1 tablespoon olive oil

1 tablespoon butter

1 cup diced celery

1 cup diced onion

2 cloves garlic, minced

1/4 cup white wine (optional)

2 tablespoons all-purpose flour

6 cups low or no sodium chicken broth

1/2 teaspoon dried thyme

2 cups cooked chicken, diced

1 pound gnocchi

1 cup coarsely grated carrot

4 ounces baby spinach

1 cup heavy whipping cream

1 teaspoon salt (or to taste)

1/4 teaspoon ground white pepper
Instructions

Heat the olive oil and butter in a medium-size soup pot over medium heat. Add the celery, onion, and garlic. Cook for 4-5 minutes until the onion becomes soft and translucent. Deglaze with white wine (optional).

Turn off the heat and whisk in the flour. Slowly add the heated chicken broth while whisking to avoid lumps.

Turn the heat back to medium and let the soup simmer for 10 minutes.

Add the gnocchi, chicken, carrot, and spinach. Bring to a boil, then reduce the heat and simmer for 5 minutes until the gnocchi start to float.

Add the heavy cream and heat through. Season with salt and pepper to taste.
Notes
For extra flavor, you can add freshly grated Parmesan cheese before serving. If using frozen gnocchi, adjust cooking times accordingly.
