Ingredients

2 tbsp olive oil

1 onion, peeled and chopped

4 cloves garlic, peeled and crushed

1 tsp ground cumin

1 tsp dried oregano

1 tsp mild chili powder

1 kg frozen butternut squash cubes (or fresh)

700 ml hot vegetable stock

1 tsp sea salt

Freshly ground black pepper, to taste
Instructions

Heat olive oil in a large saucepan over medium heat. Add the chopped onion and garlic. Cook for 5-10 minutes until the onions soften.

Reduce heat to low, then add cumin, oregano, and chili powder. Stir for 3-5 minutes until fragrant.

Add butternut squash, stock, salt, and pepper. Stir to combine. Cover and simmer for 20-25 minutes, or until squash is soft.

Blend the soup until smooth using a blender or hand blender. Add water for desired consistency.

Serve immediately, adjusting seasoning with salt and pepper as needed.
Notes
For extra richness, you can stir in some cream or coconut milk after blending. Garnish with roasted pumpkin seeds or fresh herbs.
