These BBQ Chicken Taquitos are a crispy, cheesy snack or meal, packed with flavorful BBQ chicken, cream cheese, and pepper jack cheese. Perfect for parties, family dinners, or a fun appetizer!
Ingredients

2 cups shredded chicken (from a rotisserie chicken)

3 ounces cream cheese, softened

1/3 cup BBQ sauce

1 cup shredded pepper jack cheese

2 green onions, sliced

1/2 cup corn (canned or frozen, defrosted)

10 small tortillas (fajita size)

Cooking spray or vegetable oil

Extra BBQ sauce for serving

Chopped cilantro (optional)

Ranch or blue cheese dressing (optional)
Instructions

Preheat oven to 425°F (220°C). Coat a baking sheet with cooking spray or oil.

In a medium bowl, combine shredded chicken, cream cheese, BBQ sauce, pepper jack cheese, green onions, and corn.

Lightly spray one side of each tortilla with cooking spray or brush with oil.

Place about 2-3 tablespoons of filling down the center of each tortilla. Roll up and place seam-side down on the baking sheet.

Bake for 20 minutes, or until crispy and golden brown.

Serve with extra BBQ sauce and sprinkle with chopped cilantro. If desired, serve with ranch or blue cheese dressing.
