Description

A delicious twist on classic grilled cheese with smoky BBQ chicken and melted cheese on toasted bread.


Ingredients

  • 1 ½ cups cooked shredded chicken (rotisserie or leftover)

  • ½ cup BBQ sauce

  • 4 slices sourdough or thick white bread

  • 1 to 1 ½ cups shredded or sliced cheese (cheddar, mozzarella, or blend)

  • 2 tbsp butter


Instructions

  • Combine the shredded chicken and BBQ sauce in a bowl, stirring until coated.

  • Butter one side of each bread slice.

  • Place a slice of bread butter side down on a medium heat skillet.

  • Layer cheese, BBQ chicken mixture, and more cheese on the bread.

  • Top with second slice of bread, butter side up.

  • Grill until golden brown and cheese melts, about 3-4 minutes per side.

  • Remove sandwich, let rest 1 minute, then slice and serve warm.

Notes

(Optional) For added flavor, try adding sliced red onions, jalapeños, or fresh cilantro. Use your favorite BBQ sauce (spicy, sweet, or tangy) to customize.
