Ingredients
-
1 lb ground venison
-
1 small onion, diced
-
1 tsp salt
-
1 tsp ground black pepper
-
1 tsp garlic and onion powder
-
2 tbsp butter, melted
-
5 medium potatoes, peeled and diced (small cubes)
-
½ cup sour cream
-
1 can (10.5 oz) cream of mushroom soup
-
2 cups shredded cheddar cheese, divided
Instructions
-
Preheat oven to 350°F (175°C).
-
Brown the venison – In a 10-inch cast iron skillet, cook ground venison with onion, salt, pepper, and garlic/onion powder until fully browned.
-
Prepare potatoes – Toss diced potatoes with melted butter in a large mixing bowl until well coated.
-
Combine ingredients – Drain excess grease from venison, add to the potato mixture, then stir in sour cream, cream of mushroom soup, and 1 cup cheddar cheese. Mix thoroughly.
-
Bake – Return mixture to skillet (or a greased baking dish) and spread evenly. Bake uncovered for 55 minutes.
-
Add topping – Sprinkle remaining cheddar cheese on top for the last 10 minutes of baking.
-
Rest before serving – Let cool 5–10 minutes so it sets and slices neatly.
Notes
-
Cut potatoes into small cubes (about hash-brown size) so they cook through completely.
-
Resting the casserole before serving improves flavor melding and texture.
-
You can substitute venison with ground beef or turkey.
