Alfajores Argentinos are delicate cornstarch shortbread cookies filled with creamy dulce de leche. These melt-in-your-mouth sandwich cookies are a beloved Argentine treat, perfect for coffee time, holidays, or gifting.
Ingredients

7 tbsp unsalted butter (100 g, softened)

1 cup powdered sugar (100 g)

2 whole eggs + 1 egg yolk

½ tsp vanilla extract

¾ cup all-purpose flour (100 g)

1 ½ cups cornstarch (200 g)

½ tsp baking powder

½ tsp salt

¾ cup dulce de leche (250 g)
Instructions

Cream butter and powdered sugar until light and fluffy. Mix in vanilla and eggs until combined.

Stir in flour, cornstarch, baking powder, and salt. Mix until just combined.

Wrap dough in plastic wrap and refrigerate for 1 hour.

Roll chilled dough to ¼-inch thickness. Cut into 2-inch circles and chill for 5 minutes.

Bake at 325°F for 7–8 minutes until edges are lightly golden. Cool completely.

Spread dulce de leche onto one cookie and sandwich with another.

Optional: roll edges in coconut or dip in chocolate for extra flavor.
Notes

Use thick, pastry-style dulce de leche to prevent oozing.
