A refreshing, tart, and incredibly simple rhubarb lemonade made with just three ingredients—perfect for hot summer days!
Ingredients

500g rhubarb stalks (4 cups, washed, trimmed, and sliced)

100g white sugar (½ cup)

720mL water (3 cups)

Optional: 10g ginger (1-inch piece, grated or chopped)
Instructions

For the no-cook method, blend sliced rhubarb, sugar, and water in a high-powered blender.

Strain the blended mixture through a nut milk bag into a jug, squeezing out as much liquid as possible.

For the cooked method, simmer rhubarb, sugar, and water until rhubarb softens. Let it cool, then strain and extract the liquid.

Store in the fridge and serve chilled with ice.

Adjust the sugar to your preferred sweetness.

Add a bit of ginger for extra flavor or skip it for a milder drink.
